Banana flowers are used as vegetables in South Asian and Southeast Asian cuisine. Either raw or steamed with various dips or even cooked in soups, curries or fried dishes. Their taste is more reminiscent of artichokes – they do not taste at all like vegetables or flowers, which I have tried during my life. I would even compare it to mushrooms – in its fleshiness and a certain degree of umami (that’s the mysterious fifth taste), but with a lighter texture. The aroma of the banana flower was really hard for me to capture at all from the beginning
